This right here is the main reason I do not like the copyright date coming from the credits. that and the fact that there is many that the copyright could be at the end of the year... but not shown anywhere till the beginning of the year. I personally much prefer to know the theatrical release date then I do when the work on the film was done.

That's why we need two fields.  Production Year and Theatrical Release.

The actual year of production can give the film context that the release date may not, especially if it was "on the shelf" for a long period.

2 fields would definitely be ideal. I am all for that!

But with the situation we have now... I much prefer the Theatrical Release over the copyright in the film credits.

2 fields sounds perfect.

I just got done auditing a disc that had the theater date set/accepted as 1974, yet the opening credits were stamped MCMXLLV. Figuring a movie couldn't have played in theaters before it was produced, I changed it.

I vote for five fields:

date of first shot
date of last shot
copyright year
release date in CoO
release date in locality of profile

An open field could also be reserved for a special important event during filming : main actor having a headache... or other important things...

Seriously, what will really bring a second field, with  90% of the movies with the same years and probably less than 1% with not immediately following years?

Agree with 2 fields. For 1 field I would personally have preferred copyright date (or any date that tells me when the film was actually made). I have no interest in when it was shown theatrically. But that's me.

I completely agree with that. I have absolutely no interest in when the film was first shown (often) to people on the other side of the planet). I'm much more interested in the info relating to the end of production.

2 fields would suit me just fine as well.  That would satisfy both folks who would like the theatrical release and folks who would want the copyright date.  While, yes, that would only be different on a few films, it would satisfy both sides of the argument and that would make me happy. 
If more of us valued food and cheer and song above hoarded gold, it would be a merrier world.
